24% protein and 11% fibre snacks

Veggie cakes represent a technical evolution of puffed cereal based snacks which are traditionally based on puffing rice or corn - both of which are high in carbohydrate and typically feature around 3% fibre and around 8% protein.

In launching veggie cakes, we wanted to elevate the nutrition profile and explored puffing non cereal based commodities such as lentils and green peas.
From a nutrition perspective, this addresses a known problem of fibre shortage in western diets, whereby a large gap exists between the daily amounts of fibre recommended in the human diet (28–42 g/d) and that which is actually consumed (median intake, 12–14 g/d) representing a shortage of 50-70%. Kallo veggie cakes are typically 24% protein and 11% fibre. From a biodiversity perspective, it is known that 90% of the world’s calories are derived from only 9 staple agricultural crops, cereals (rice, wheat, oat, maize, etc.), and tubers (e.g., potato, taro and yam).
Ecotone sought to create a range of healthy snacks based on lentils and peas which can be grown in Europe and have a lower carbon footprint. Furthermore, lentils and peas have environmental and sustainability benefits as these crops fix atmospheric nitrogen and additionally can be grown in more temperate regions. The flavour of veggie cakes is also very good as the lentils contribute more umami type savoury flavour and are very compatible with savoury type flavours. We continue to add to the range, most recently with Sea salt and cider vinegar and also creamy Thai curry flavours.
